Tortilla española
Ingredients
- 1 onion, diced
- 4 potatoes, diced
- 4 eggs, beaten
Instructions
- In an 8-inch, non-stick frying pan, pour a generous amount of avocado oil and fry the onions until very soft, about 10 minutes. Transfer to a medium sized mixing bowl.
- Pour another generous amount of avocado oil into the pan and put the potatoes in. Stir and cover with a lid so the potatoes get cooked through, but also fried. About 5 minutes. Transfer to the mixing bowl.
- Mix the onion and potatoes together, and then pour the eggs in. Mix until combined and then pour it all into the pan. Cover with a lid and cook until the top looks set.
- Take off the lid. Place a plate larger than the pan face-down on top. Very quickly flip the pan over so all the tortilla comes out, and then slide back into the pan. Cook uncovered for another two minutes, then flip out onto a serving plate.
