Sancocho de gallina

Ingredients

Aliños (blend to make 2 cups)

Instructions

  1. In a large pot (at least 8 quarts), place the chicken carcass and cover with water. Bring to a boil, then cover and let simmer on low for 1.5 hours. Remove and dispose of the carcass.
  2. Add chicken pieces, corn, aliños, and green plantain. Add broth and extra water until completely submerged. Bring to a boil, then cover and let simmer for about 30 minutes.
  3. Add the potatoes and yuca and continue cooking for 30 more minutes or until tender. Add the cilantro.
  4. Test and adjust the seasoning. Serve.
