Sancocho de gallina

Ingredients
- 1 large whole chicken, cut into pieces and carcass
- 3 quarts water / broth
- 3 ears of corn (fresh or frozen), cut into halves
- 2 cup of aliños
- 1 teaspoon salt
- 2 green plantains peeled and cut
- 6 medium potatoes peeled and cut
- 1 pound frozen yuca cut into large pieces
- ¼ cup chopped fresh cilantro
- ¼ teaspoon ground pepper
Aliños (blend to make 2 cups)
- ½ medium green pepper
- ½ medium red pepper
- ½ medium onion
- 4 scallions
- ½ teaspoon cumin
- 3 cloves garlic
- 1 cup of water
- ½ tablespoon sazon
Instructions
- In a large pot (at least 8 quarts), place the chicken carcass and cover with water. Bring to a boil, then cover and let simmer on low for 1.5 hours. Remove and dispose of the carcass.
- Add chicken pieces, corn, aliños, and green plantain. Add broth and extra water until completely submerged. Bring to a boil, then cover and let simmer for about 30 minutes.
- Add the potatoes and yuca and continue cooking for 30 more minutes or until tender. Add the cilantro.
- Test and adjust the seasoning. Serve.
