purple sweet potato tortillas

Ingredients
- 2 cups mashed purple sweet potatoes (about 3 large purple sweet potatoes)
- 1 cup cassava flour
- ½ tsp salt
- 2 tbsp avocado oil
Instructions
In a large bowl, combine mashed sweet potato, cassava flour, salt, and avocado oil.
Then use your hands to bring the mixture together into a large ball of dough.
Divide the dough into eight equal pieces and roll each piece into a smaller ball.*
Press each ball of dough in a tortilla press lined with parchment paper on both sides. Alternatively, roll out each ball of dough between two sheets of parchment paper using a rolling pin.
Cook each tortilla in a hot, dry cast iron pan over medium heat (no oil necessary). Flip with a spatula as soon as the tortilla loosens and slides around easily in the pan, about 45 seconds-1 minute on the first side and 30-45 seconds on the second side. Repeat with remaining tortillas.
