Ingredients
- 2 mangoes, ripe but firm, peeled and finely diced
- 1 medium cucumber, finely diced
- ¼ large red onion, finely diced**
- ¼ cup packed cilantro, chopped
- juice of ½ lime
- zest of 1 lime
- 1 tbsp olive oil
- sea salt to taste
Instructions
- In a large bowl combine mango, cucumber, red onion, cilantro, lime juice, lime zest, olive oil, and sea salt, to taste.
