creamy cauliflower gratin

  1. Preheat oven to 375F and set a large pot of salted water to boil.

  2. Meanwhile, make the vegan queso cheese dip.

  3. Once blended, return vegan queso to skillet to thicken. When desired consistency is reached, remove sauce from heat and set aside.

  4. Pre-cook cauliflower in the salted boiling water for 3 minutes.

  5. Strain cauliflower and set aside.

  6. Fill an 8x8 baking dish with half the vegan queso.

  7. Add cauliflower and sprinkle with chopped parsley.

  8. Add remaining vegan queso.

  9. Bake in middle rack of the oven for 20 mins then broil 3-4 mins (optional).

  10. Serve warm.
