arroz con leche
From Aran Goyoaga
Ingredients
- 1/2 gallon (1.9 liters) whole milk or oat milk or soy milk
- 1 cinnamon stick (Ceylan preferably)
- 1/2 teaspoon kosher salt
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (100 g) short grain rice, such as arborio or Calrose
- Ground cinnamon
Instructions
Combine the milk, cinnamon, and salt in a large saucepan and heat over medium high heat until it begins to steam and small bubbles form on the surface.
Add the sugar and rice and stir. Bring the milk back to a light simmer, then reduce heat to medium. Cook, stirring every 5 to 10 minutes, until thickened and creamy, about 45 to 60 minutes.
Divide the arroz con leche into bowls and sprinkle the top with some ground cinnamon. I like to serve mine chilled.
